I did add about 1/2 tsp of oil per paratha just brushed it on both sides with a pastry brush.

I think setting the dough aside for about 20-30 mins helps too.Luv2cookhttps://www.blogger.com/profile/06461051112373008830noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1144166381471179902006-04-04T08:59:00.000-07:002006-04-04T08:59:00.000-07:00These parathas looks moist and delicious.Whenvevr ...These parathas looks moist and delicious.Whenvevr I make methi paratha they become very rough or dry..do you use oil while making the paratha...Sumihttps://www.blogger.com/profile/09475734627448281784noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1143215694935350602006-03-24T07:54:00.000-08:002006-03-24T07:54:00.000-08:00I love methi parathas too! :)I love methi parathas too! :)Kayhttps://www.blogger.com/profile/07938245544735604650noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1143209636806535242006-03-24T06:13:00.000-08:002006-03-24T06:13:00.000-08:00KM:I bet it would go well with sourcream.Arjuna an...KM:

I bet it would go well with sourcream.

Arjuna and Annita:

Thank you!

Elizabeth:

I think it does taste like thyme. It imparts a specific aroma to the dish you are making. I usually use it for strictly savory dishes only. It's English name is Bishop's weed and its botonical name is Trachyspermum ammi. You should be able to find this in any Indian grocery store easily.

The seeds have to be used with caution as they can be really bitter and will ruin the entire dish if not used properly.

I personally like "amla/gooseberry pickle" that I got from India. But mango pickle will go well too. I am not a big fan of lime :-p. Make sure you have a side of plain yoghurt :). If you wish, you can top the hot parathas with some ghee/clarified butter for enhanced taste!Luv2cookhttps://www.blogger.com/profile/06461051112373008830noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1143176974847179372006-03-23T21:09:00.000-08:002006-03-23T21:09:00.000-08:00I had to look up "ajwain" on Gernot Katzer's spice...I had to look up "ajwain" on Gernot Katzer's spice pages. I'm not sure I've ever seen or tasted it! He says it is a bit like thyme. Would you concur?

I have just recently discovered the wonders of aloo methi and adore methi! (Not wild about the seed but love the leaves.)

Now I think I must try making methi parathas as well! Any particular pickle that you would recommend? Lime? Mango?

-ElizabethElizabethhttps://www.blogger.com/profile/08818302133113874649noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1143168508356781202006-03-23T18:48:00.000-08:002006-03-23T18:48:00.000-08:00Gotta try this one..gr8 recipe!!Gotta try this one..gr8 recipe!!Annitahttps://www.blogger.com/profile/15580144490421191146noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1143135571010745182006-03-23T09:39:00.000-08:002006-03-23T09:39:00.000-08:00Methi roti looks delicious.Methi roti looks delicious.KAhttps://www.blogger.com/profile/03580157458191209215noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1143135127160051182006-03-23T09:32:00.000-08:002006-03-23T09:32:00.000-08:00CM: This paratha tempts me to make some, with my f...CM: This paratha tempts me to make some, with my favorite sour cream:)Kitchenmatehttps://www.blogger.com/profile/06489405168823512298noreply@blogger.comtag:blogger.com,1999:blog-23439184.post-1143124504188516502006-03-23T06:35:00.000-08:002006-03-23T06:35:00.000-08:00Santhi:Thank you so much.
